Jérôme Guichard runs Domaine de Sauveterre together with his wife Ghislaine, a small estate in the heart of the Mâconnais region of Burgundy. In 2011, Jérôme took over the vineyards of Guy Blanchard, which had already been farmed organically for generations, and he has continued to cultivate them with great respect for the land: no ploughing, the use of herbal teas and compost, and a complete absence of chemical products. His philosophy is to allow the soil and time to express themselves rather than the hand of the winemaker. In the cellar, he follows a natural and minimalist approach, with no additives or filtration, producing mainly Chardonnay and Gamay from parcels characterized by predominantly limestone and clay soils.
