Koi was founded in 2018 in Valsamoggia by Flavio Restani, who today owns around 3.5 hectares of vineyards with vines ranging from 30 to 50 years old. The grape varieties grown are all historic varieties from the area, including Pignoletto, Trebbiano Modenese, Alionza, Albana, Lambrusco, and Moscato. The wines produced are mainly bottle-refermented and sparkling wines, with a strong sense of place and a distinctive territorial identity.
