The distillery’s story began in 1997, at a time when mezcal was still largely unknown outside Mexico. That year, an abandoned *palenque* in Santiago Matatlán, in Oaxaca’s Tlacolula region, was restored, marking the beginning of a project built around respect for tradition and artisanal craftsmanship. Today, the distillery continues to work exclusively with carefully selected **Espadín** and **Tobalá** agaves. In 1999, the **Alipús** project was born with the aim of creating a map of Oaxaca’s mezcals, highlighting how the unique conditions behind each production area—its soils, water sources, and climate—shape the final spirit. The project celebrates the work of small traditional mezcal producers throughout the region, preserving their ancestral knowledge and supporting an authentic mezcal culture deeply rooted in its territory.
