Nicolas Jacob

Nicolas is a talented vigneron who trained alongside Macle and Ganevat, from whom he inherited a rigorous approach and great sensitivity to wine. He cultivates his vineyards organically and biodynamically, working by hand and showing deep respect for the soil. In the cellar, he follows a minimal approach: spontaneous fermentations, no filtration, and very limited intervention. His wines, pure and vibrant, precisely and honestly reflect the identity of each individual parcel he cultivates.
