Yves Roy is a Jura winegrower who chose to take his first steps in wine with the curiosity and humility of someone who embraces being a “novice” by choice. After working alongside Valentin Morel, he founded Nøvice in Poligny, where he now cultivates a few hectares of old vines planted with Savagnin, Poulsard, Trousseau, and Chardonnay. His approach is radically empirical and sensitive: every gesture, both in the vineyard and in the cellar, comes from listening to the terroir rather than following a codified technique. His farming is organic and alive, based on the observation of soils and seasons. In the cellar, Yves works through subtraction: no chemicals, no filtration or fining, allowing spontaneous fermentation to reveal the vitality of the grapes./espositori_single_template]
